Why is the available big-bore head gasket too large for a .125-over Flathead?

Ed says the only head gasket available for the overbored engine is a big-bore gasket, and that its bore is bigger than it needs to be. Instead of adding about .060 per side, he says the maker added .125, so the gasket suits a bore .250 bigger than original.
