How is the block modified so the head gasket seals with ARDUN heads?

On Steve's block the factory valve seats were ground out and a circular piece of cast iron was pressed into each one, then machined flat. That makes the sealing area between the old valve pocket and the cylinder much wider, giving the head gasket a good surface.
