What does rolling over mean on a dyno?
Dyno results are torque and horsepower plotted against RPM. The dyno measures torque, and horsepower is calculated from torque and engine speed. Both rise as RPM goes up; rolling over, or tipping over, is the point where they stop increasing and start to decrease. Testing beyond that point is not really beneficial.
